First, some geographical caveats: Texas is so big, it has at least two distinct dialects: the East Texas drawl (where you'll be asked if you want regular "tay" or "swate tay" to drink with your dinner) and the West Texas twang.
As an example, Texans like to meet people so they might say to you "We've Howdied but we haven't shook."
Or when a Texan tells you "this ain't my first rodeo," he's telling you he knows what's really up.
So if you think you're kinda sorta comfortable with talkin' Texan, we recommend this "advanced course" before you try and have a long conversation with us...and remember...don't kick a cow chip on a hot day - that'll be a dead giveaway!
